The Delicious Barbie Cupcakes at Sprinkles – A Review!

This week Sprinkles released a new Barbie branded cupcake in honor of the legendary doll’s 65th birthday. Barbie debuted at the New York Toy Fair on March 9th 1959 and (Ryan Gosling’s Ken Voice saying) Mattel has registered the 3.9.59 as her birthday ever since. In fact, a fun easter egg in the Barbie movie is that the mileage on her car is 39,1959 miles.

And look, I’ve gone Barbie-crazy over the past eight months since the film came out. Sure, I was a lapsed Barbie-fan before the film was released, a long-time Barbie Signature member and a card-carrying Barbie Collector.com member before that. But I admit, the film really re-ignited my passion for the brand and this cupcake is probably just as much about celebrating the film’s multiple Oscar nominations (it was released just before Oscar weekend) as it is about Barbie’s 65th. And I’m ok with that (and I don’t need to rehash my bonafides again).

Sprinkles’ Barbie-themed cupcake is a “pink velvet” (a pink-shaded version of the classic red velvet flavor) flavored cupcake filled with a white chocolate ganache core, a pink frosting, and a sugar-candy topping. A few days ago, I saw pictures of the cupcake online and finally made it to Sprinkles today to finally try it for myself.

First off, the packaging was great. I love that sticker and saved it as a little memento. If you order a larger box, you also get a Barbie-themed sleeve. But you’re not here for the packaging – what about the cupcake?

Well, the cupcake was honestly better than I could have imagined. I’m not a red velvet fan at all but for some reason I loved the twist on this version. It tasted lighter and less rich than red velvet and that was fine for me – almost like a vanilla/red velvet hybrid. If this was just a case of food coloring tricking my brain, then so be it, I loved it.

The ganache cream filling was light – for me, it was way lighter than the usual Sprinkles filling – and paired very well with the pink velvet. The frosting was delicious – as all Sprinkles frosting usually is. The little Barbie candy badge was a little tough to eat and wasn’t my thing and I think I might save it as a souvenir if I get another one.

Overall this cupcake was a legitimate 9.5/10 for me – with the only ding being the candy badge on top. But I honestly think this might be the best Sprinkles cupcake I’ve ever tasted and I will be going back again and again. I’ve already made plans to order it again in a few days for my “Barbie and Stacie to the Rescue” (coming March 14th on Netflix) viewing on Thursday. And I’ll be back after that, well at least for as long as Sprinkles offers this cupcake – which in this case is through 3/24.
